Star Wars Bento

Well, when the theme is "Movies" what comes to mind: Star Wars!

Here we have my Star Wars tribute bento:
From the top:
R2D2 banana (made with banana, peanut butter, crushed nuts and a kit-kat finger. For the recipe see the Banana Trees listed here)
Jabba the Hut Jelly - green with orange mandarin segments, and star shaped kiwi fruit.

2 suns of tatooine toast (toad in the hole, with 2 holes)
Sand people crackers with the droid I am looking for
Death Star cheese and coleslaw
In a galaxy far far away peppermint slice
Light sabred cheese, grape and pineapple

This was accompanied by some pumpkin soup.

The recipe for the no-bake peppermint slice is posted here, and the toast was a simple deal:

Cut out the crusts and centres of the bread

Toast one side in a pan with butter. Flip.

Pour a little egg mixture in the centre

Mayonnaise and Salad Dressing

I've always lived in fear of mayonnaise, thinking its some special sauce that awesome people make. Turns out I can do it too. Admittedly, I only tried because I ran out of the bout stuff. This just tastes....well.. better. The mayonnaise recipe is loosely based on Allison Holst's one... But tweaked to ingredients I always have at home.

Mayonnaise
1 egg
1/4 t salt
1/4 t sugar
1/2 t mustard (I used honey mustard and dry hot mustard)
4 t cider vinegar
Cup olive oil
Black pepper

Bung everything in the food processor (except the oil) I have a whizzy attachment to my stick blender I wanted to try. Probably too much like hard work. But it is cool.

Put a little oil in. Whizz like crazy. Put more oil in. Whizz. Keep adding more oil in larger amounts until its all added.

Store in the fridge.

I used these swanky Tupperware containers. Mainly as I got them cheap at a party for spending too much money. They were larger than I was expecting, but have been great for shaking dressings and storing. And I have dropped them. Full. And the lids don't come off!

Salad dressing

I use this on pasta salad. I made pasta tonight... But needed mayonnaise... To make this dressing! Crazy.
1/2 c mayonnaise
Juice of one small lemon
Black pepper
Salt
2 Tbs olive oil

And shake it up - so simple.

So I made a pasta salad. And even packed it for tomorrow. And the next day. I will make my challenge of 5+ a day.

I'm so organised this week. See... Lunch boxes. Husband lunch container. Lasagne. Fruit. Super super organised.

5+ a Day Challenge: Monday

Well, I made it through one day. And I am pleased so far. While I still wanted to eat deep fried, high sugary goodness in amidst assessing the end of terms work, I didn't.

Breakfast
1 serving peaches
Special K

Lunch
Lasagne (vegetarian) 1 vege serving
Kiwi fruit
Mandarin

Snacks
Mixed nuts
Cheese and crackers

Dinner
Mushroom and Leek soup 1 vege serving.

I'm being fairly tight on the soup and lasagne, just to be fair. The soup has loads of mushrooms that evidently count as vege, but I've kept it conservative.

Tomorrow I shall attempt a banana!

World's Fastest Lunch

One thing I really like about the ol' Easy Lunchbox is the speed of making lunch!

Okay, so I go all feral-masterchef on the weekends to prepare the bits-n-bobs, but that is just so I can watch Dr. Who before school.

Here we have baked-bean mousetraps, with dried peaches and blueberries, and almonds... with yogurt, crackers and onion dip, an apple and a banana.... and then all piled into the cooler bag with a tiny esky cooler bottle to keep it all at a good temperature.

I love the banana guard- but I have lost my froot guards sadly.  I may have to replace them.  I also love the Sistema cutlery sets... even though Dan lost my knife and fork!

Individual Lasagne all set for Lunch

I've been a bad blogger of late.... in fact, since I had my technology stolen from my car.  However, my cooking and lunches have actually been better than... well.... usual.

2013 was MEANT to be the year of eating well.... but generally it has become the year of eating a lot.  And I am okay with that. :D

Here we have an easy-lunchbox with a joyous lunch.  Dried bananas and fresh grapes... with a cucumber and lettuce salad with.... INDIVIDUAL LASAGNE!

Generally this was a genius idea and I shall do it again.  This week I have baked stuffed potatoes and the man has chicken and lentil pies (yeah, I've been hiding vegetables in his food again)... and I have a giant pot of pumpkin soup!  It's amazing.  Sundays have become ultimate preparation time.  I have become a veritable masterchef!

Watch out for this week as I need to make a Rainbow Cake for a work shout on Friday, and the potatoes will make a showing... as well as some awesome apple pie.  :D

Takeaway Tacos

Lunch today in an Easy Lunchbox - I do love these things, but they are a bit of a pain.  Sometimes the lids don't sit right, but the carry case is great.  I throw in an icepack that keeps everything cool.  Just keep the bag flat.

Tacos- I heated them up and then put the sour cream on.  Warm sour cream.... ewww.  Tacos made with lettuce, carrot, cheese, refried beans, and of course, sour cream.  With a selection of strawberries and grapes, and a couple of Danish cookies.

Simple as, man....

Alright, so this photo is AWFUL!

But look at the little doggie!  (or something).  He was crafted out of 2 marshmellows on a toothpick, with food colouring used to make his face.

The main is a pita sandwich with salad, and the staple strawberries and nuts.

Comfort Food

I found a bunch of photos from earlier.  I thought I had lost them when my camera died... but it turns out I didn't!  Yay!

So here we have a pasta bake, nut mix with cranberries in the side bits.

In the main section, boiled egg, strawberries, cheese slice and a couple of baked stuffed potatoes.

And Another Way With Iskender

The Iskender revisited.  We now all know I LOVE LEFTOVERS and this is why.... Yummo.  The dark section is beetroot, yogurt and hummus in the other side, lettuce, carrot and cucumber with felafel patties and rice things... done in one of those rice shapers.... a heart and a star.  Too cute to eat really.  But I ate it all..... for morning tea!

Picking Away at the Food

This was my Model UN lunch.... we were running a Model UN event, and I wanted something I could totally eat on the run.

Here we have strawberries, kiwifruit with a giraffe pick, peanut butter lunch punch puzzle sandwiches, popcorn, mixed nuts, small sports-ball chocolates.... and there was a yogurt and fruit pottle on the side.

And a popular but simple lunch

Okay, this lunch had the kids totally in awe, and I wasn't really that impressed with how it turned out...

We have an easy lunchbox, with:
- Boiled egg (in cutesy eggshell holder)
- Homemade hummus in the penguin holder to dip the vege sticks in
- Carrot and Cucumber sticks with an elephant pick
- Peanut Butter on Wholegrain bread, jigsaw puzzle lunch-punched.
- Cheese wedge
- Strawberry
- Tomatoberry

But people wanting to see my lunch totally makes it worthwhile..... I am such a nerd.

A Yellow Lunch

This lunch had my class in absolute jealous mode.... mainly over the jelly....

Here we have in the yellow container Turkish flat breads with baked beans and Swiss cheese toasted on.

In the Easy Lunchbox there is lemon jelly - set into the container (a remnant of the husbands instruction to only eat clear foods prior to his Drs appointment), a hard boiled egg sliced into segments, cheese grape and pineapple skewers, mixed nuts with goji and cranberries and a couple of after dinner mints... yum!

Iskender for tea

I ordered the Easy-Lunchbox last year, and the set arrived while I was away.  I thought it was time that I gave them a whirl.

Last night I put some leftover rice in the large compartment.  With tabbouleh in the fridge, a Turkish iskender was totally on the menu.

While the falaffels were dry-frying, I harvested lettuce and cucumber, grated a carrot, and popped it all in the lunchboox with a little beetroot.  In the small containers, hummus and a little left-over natural yogurt.

When the falafels were done, dinner was ready.  And did I mention, I have tabbouleh and cooked falafels left-over for tomorrow.  I did say I was the master of the letover... :D

I was impressed with the depth of the compartments in the easy lunchbox, it held enough for my dinner, which was nice, as I still treat this as the largest meal of the day.  A little difficult to eat from cross-legged, but I could infact eat at a table.... (Being a Drama teacher often means I spend a lot of time sitting on the floor with my food.....)
