5+ a Day Challenge: Day 5

Well, the last day of term, and the one I had dreaded most. Usually a sugar fed high of chaos.

Breakfast
- Special K
- peaches

Lunch
- lasagne (vegetarian)
- Kumara soup
- 2 bread rolls
- mandarin



I was too full for the pasta salad or kiwi.

Snacks
- nuts
- scone with jam
- Pringles chips (it was a movie, alright!)

Dinner
- falafel Iskender

Portions: 8

And how was I feeling? Together. Usually at the movies I eat all sorts, and drink juice. This time I went with peanut m&ms and didn't even touch them. I drank a bottle of water and was happy.

I know I need to eat as many fresh vege as possible. In my counts I've only been using the vege portions of things that were fresh or whole. And I made it.

5+ a Day Challenge: Day 4

It's been a struggle to eat right today, with 33 teenagers in the capital city, Wellington. Admittedly, it's the coolest little capital in the world. We hiked all over the city, having a blast.

Breakfast
- blt bagel - sans bacon
- hash brown
- hot choccy (yup, maccas)

Lunch
- tank juice (apple, orange, pineapple)
- 2 slices of the best marguerita pizza ever!

Snacks
- cookie
- Scroggin

Dinner
- Kumara soup (though the husband got takeaways.

5 portions - I'm not counting the hashbrown as a portion, nor the tomato on the pizza, which was made fresh. So wonderful. I also bought new bento stuff... I'm so bad!



But this is cool... Chard or silver beet growing outside the train station. Community food looking gorgeous! That's Ghandi in the back!





Plans are afoot for a better day tomorrow.

Day 3: 5+ a Day Challenge

Well, I thought today would be chaos but, it was okay.



Breakfast
- Special K
- peaches

Lunch
- carrot
- pasta salad
- 2 kiwi fruit
- mandarin
- mixed nuts

Snacks
- yogurt
- cheese and crackers
- scroggin

Dinner
- 1 cold lasagne serving

7 servings! Yay!

Day 2: 5+ a Day Challenge

Okay. Getting there. And I'm feeling much more together than I usually do at the end of term.

Breakfast (in a rush as I attempted to do last minute sewing)
- banana
- stewed apples with oat sprinkles

Lunch
- lasagne (1 vege portion)
- kiwi fruit
- mandarin
- banana
- yogurt

Snacks
- scroggin
- cheese and crackers

Dinner
- mushroom soup
- toast

That makes 7! Actually better than I imagined.

Mayonnaise and Salad Dressing

I've always lived in fear of mayonnaise, thinking its some special sauce that awesome people make. Turns out I can do it too. Admittedly, I only tried because I ran out of the bout stuff. This just tastes....well.. better. The mayonnaise recipe is loosely based on Allison Holst's one... But tweaked to ingredients I always have at home.



Mayonnaise
1 egg
1/4 t salt
1/4 t sugar
1/2 t mustard (I used honey mustard and dry hot mustard)
4 t cider vinegar
Cup olive oil
Black pepper

Bung everything in the food processor (except the oil) I have a whizzy attachment to my stick blender I wanted to try. Probably too much like hard work. But it is cool.



Put a little oil in. Whizz like crazy. Put more oil in. Whizz. Keep adding more oil in larger amounts until its all added.



Store in the fridge.

I used these swanky Tupperware containers. Mainly as I got them cheap at a party for spending too much money. They were larger than I was expecting, but have been great for shaking dressings and storing. And I have dropped them. Full. And the lids don't come off!

Salad dressing

I use this on pasta salad. I made pasta tonight... But needed mayonnaise... To make this dressing! Crazy.
1/2 c mayonnaise
Juice of one small lemon
Black pepper
Salt
2 Tbs olive oil

And shake it up - so simple.

So I made a pasta salad. And even packed it for tomorrow. And the next day. I will make my challenge of 5+ a day.










I'm so organised this week. See... Lunch boxes. Husband lunch container. Lasagne. Fruit. Super super organised.

5+ a Day Challenge: Monday

Well, I made it through one day. And I am pleased so far. While I still wanted to eat deep fried, high sugary goodness in amidst assessing the end of terms work, I didn't.

Breakfast
1 serving peaches
Special K

Lunch
Lasagne (vegetarian) 1 vege serving
Kiwi fruit
Mandarin

Snacks
Mixed nuts
Cheese and crackers

Dinner
Mushroom and Leek soup 1 vege serving.



I'm being fairly tight on the soup and lasagne, just to be fair. The soup has loads of mushrooms that evidently count as vege, but I've kept it conservative.

Tomorrow I shall attempt a banana!

5+ A Day

We all know we are supposed to have 5 servings of fruits and vegetables a day, but who really manages this? I know it is a challenge for me at the end of term, as its just a busy time of performances, assessments and general chaos. Often I find myself running on chocolate and energy drinks, macaroni and cheese, and plenty of toast. Then the guilt settles in.



This year I have been working hard to have things actually growing in the garden over winter, with some success! It's still not enough to cover us for a vege supply over winter, but it has been wonderful. The perpetual spinach has been thriving with the silver beet (chard) both making regular appearances in husband lunches.




Of course I picked a cold and windy day to show my gardens. The leeks are coming along, spring onions are ready, and various lettuces coming along as and when they like. The citrus trees are also doing well, it's lemons ready, mandarins soon to follow, and tangelos in the wings.

My challenge to myself this week is to make sure I have the 5+ a Day during my school week. I will attempt to blog my progress on this or I will lack accountability!

I also plan on making a mushroom soup this week as well.

15 Posts... 15 Days

This is the plan....

I have school holidays... (YAY!) and a list of 200 things I have to do (BOO!)... and that doesn't include any of the normal day-to-day stuff.  So I figure, I need to stay focussed on what is important during this time.  The plan is simple... 15 food posts in 15 days.  Something that will force me to write in the blog every day, even though the rest of my life will be chaotic.

Well... plans are good.
